On May 15, 2025, our company reached an agreement to conduct a six-party joint research project focusing on the evaluation and analysis of food as part of our initiative to “Science of Palatability.” This research project is an extension of the joint research initiative formalized in a Memorandum of Understanding (MOU) signed on March 23, 2023 (Note 1). The project will be conducted as one of the themes within this joint research and involves participation from six organizations: TAKESHO FOOD & INGREDIENTS, TAKESHO FOOD VIETNAM, ACECOOK VIETNAM, Can Tho University (Vietnam), Niigata University, and The University of Tokyo.
The purpose of this research is to compare how Japanese and Vietnamese people perceive, express, and prefer tastes, aiming to identify similarities and differences in their respective food cultures. The six organizations are collaboratively working on evaluating the characteristics of foods while conducting preference surveys involving students from Can Tho University and Niigata University.
By gaining a deeper understanding of consumers’ sensitivities to food across different cultural backgrounds and establishing methods for evaluating and analyzing those preferences, we aim to apply these findings to product development for overseas markets.
